Ramen salad with shrimp and scallions: Chewy chilled noodles make the right summer time salad

Ingredients: 

10 ounces non-instant dried ramen noodles (see headnote)

2 tablespoons seasoned rice vinegar
2 teaspoons toasted sesame oil, plus extra to serve
1 pound cooked, peeled shrimp, minimize into ½-inch items OR 2 cups cooked shredded rooster
1 bunch scallions, thinly sliced OR 1 small cucumber, halved lengthwise and thinly sliced OR each

Directions: 

Cook the noodles in a big pot of boiling water till tender, then drain, rinse with chilly water and drain once more. In a big bowl, combine the soy, vinegar and sesame oil. Add the noodles and toss. Divide amongst 4 serving bowls, then high with shrimp and scallions. Drizzle every portion with further sesame oil.
